Presenting classic local flavours in a modern way is as much fun for the owner here as cooking. My days are filled with working in the garden, gathering raw materials from the woods and fields, marketing, liaising with producers, and personally serving meals to guests. Quality, regionality, and seasonality are the most important foundations of my credo, as well as creating an outstanding gastronomic experience for our guests.
Cseke Gábor, the sommelier, has worked with wine for 20 years. He has never been motivated by big names, only by the search for true wine and hidden treasures in the wine selection. I like shorter yet ‘powerful’ wine lists because if one updates them skilfully, one can show one’s guests a lot of exciting wines.
